What is Pizza Rustica?

We are all familiar with the round, flat-surfaced with toppings on top pizza, right? Well, those are regular pizzas. Pizza Rustica is a traditional Italian food, known as Pizza Ripiena which looks more like a pie, inside filled with cheese and meat. The thickness of this pizza is generally 3 to 4 inches and it takes about 2 or more or fewer hours to make.

Ingredients and Measurements

All-purpose flour (6 cups), salt (¼ teaspoon), chilled salted butter (1 pound), eggs (16), prosciutto (12 ounces), boiled ham (8 ounces), pepperoni (8 ounces), soppressata (8 ounces), mozzarella (8 ounces), provolone (8 ounces), ricotta (2 pounds), grated pecorino Romano (4 ounces), pepper (1 teaspoon)

Preparation

For Dough: Take a large bowl and whisk the flour with salt. Then add the butter to the flour and mix it thoroughly. Take 5 eggs and knead them for a minute. Then add it to the flour as well. Add about 1 1/4 cups of ice water. Knead the dough for 5 or more minutes and then cover with plastic wrap and set aside for 30 minutes.

For Filling: Mix the boiled ham, cheeses, 10 eggs and pepper in another large bowl.

Cooking Process: Preheat the oven to 350 degrees. Separate the dough into two parts. Roll out one of the dough portions into a rectangle to line the bottom and sides of a 10-by-15-inch glass baking dish. Add the filling and smooth it lightly. Moisten the edges of the dough with a little water. The use the other portion of the dough to cover up the filling and poke some holes on it. Bake for 45 minutes. Take out from the oven and brush top and edges with the beaten egg, then return to the oven until golden brown, another 45 minutes. After taking the pizza out of the oven, let it cool for a while.
