Lasagna is a classic Italian dish that everyone loves, and this vegetable version is no exception. Layers of pasta, rich ricotta cheese, colorful vegetables, and a flavorful tomato sauce come together to create a dish that is comforting and satisfying. Ingredients:

  • 1 box lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups spinach leaves
  • 1 jar (24 oz) pasta sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper, to taste

Instructions:

  1. Cook the noodles: Cook the lasagna noodles according to the package instructions. Drain and set aside.
  2. Prepare the vegetables: In a large pan, heat the olive oil over medium heat. Add the onions and garlic and cook for about 5 minutes until soft. Add the zucchini, bell pepper, and mushrooms and cook for another 10 minutes until the vegetables are tender. Add the spinach and cook until wilted. Season with salt and pepper.
  3. Make the cheese mixture: In a bowl, mix together the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, egg, basil, salt, and pepper.
  4. Assemble the lasagna: Preheat the oven to 375°F (190°C). In a baking dish, spread a thin layer of pasta sauce. Place a layer of noodles on top, followed by a layer of the cheese mixture, a layer of vegetables, and a layer of pasta sauce. Repeat the layers until all the ingredients are used up, finishing with a layer of noodles and pasta sauce. Top with the remaining mozzarella and Parmesan cheese.
  5. Bake the lasagna: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly.
  6. Serve: Remove from the oven and let it cool for a few minutes before slicing and serving.

Notes:

  • Feel free to customize the vegetables according to your preference and season. Other good options include eggplant, carrots, and broccoli.
  • You can also add a layer of cooked ground meat or sausage if you want to add some protein.
