  • Cold-pressed coconut oil or olive oil, 1 tablespoon
  • 2 small leeks, washed and cut finely
  • Garlic cloves, two
  • 1–2 tablespoons fresh ginger
  • 2 tablespoons chopped fresh thyme
  • 600 grams of peeled potatoes, 4 cups of vegetable stock, or 4 cups of water with 1 tablespoon of dried vegetable stock powder.
  • 1 large bunch/150 g of fresh, large-leaf spinach with thick stems that has been rinsed to taste, discarded sea salt

For Serving

  • Add 1 avocado, sliced yogurt, or coconut yogurt to the dish.
  • Beans Chermoula Jalapeno (recipe below)
  • Olive oil drizzled over hemp seeds


  1. Add the oil to a larger saucepan on medium heat.
  2. Now, add the rinsed and finely chopped leeks, peel, grated ginger and garlic.
  3. After a minute, add the thyme. Let it simmer until it becomes fragrant and soft.
  4. Put the potatoes and vegetable stock into the pan.
  5. After 15 minutes of cooking, add the spinach.
  6. Stir the spinach, and let it simmer for a good many minutes.
  7. Mix the soup using a hand blender.
  8. Now, add the salt, and flavors as per your requirements.
