Ingredients
- 2/TBS of olive oil
- 1 onion
- 1 clove of garlic
- Fennel seeds, 1 teaspoon
- 10 grams of cumin seeds
- 1 head (500 g/1 lb) of sliced, floretized cauliflower and 4 (300 g/10 oz) scraped, diced beetroots
- 2 potatoes, enough water, or vegetable stew to cover
- 1 tsp. sea salt, 1 tsp. lime juice, or to taste
Hazelnut & Pistachio Dukkah Spice Blend
- Pistachios, 4 tablespoons
- Hazelnuts, 4 tbsp.
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 2 tablespoons. fennel seeds
- Sesame seeds, 4 tablespoons.
- 1 teaspoon nigella seeds
- 1 teaspoon sea salt
Instructions
For the Pistachio Dukkah
- Roast the pistachio nuts and hazelnuts.
- Add the coriander, fennel, cumin, and sesame seeds to the pan. Roast these spices too for two minutes.
- Now, you can add nuts, sea salt, and nigella seeds.
- Then, transfer all of the roasted ingredients to a food processor. Pulse it a few times to get a crunchy texture.
- Now, store it in airtight glass.
For the Soup
- Add oil, and heat it up.
- Now, stir-fry the garlic, fennel seeds, onion, as well as cumin seeds until it becomes fragrant and golden.
- Now, you should add the florets, diced stems, potatoes, beetroots, salt, and water. Bring it to a boil.
- Let vegetables simmer for 20 minutes.
- Now, blend the smooth as per your taste. You can also add lemon and cream.
