We are sharing rhubarb, ginger, and strawberry soup so that you can enjoy every bit of it. All you should not do is get carried away with the numbers too much. The amounts of rhubarb, strawberries, dates, water, etc. can be adjusted. Everything depends on the sweetness or tartness of the various fruits, the size of the dates, and the level of sweetness you desire. In case any of the ingredients are costly, you can skip it. We skipped vanilla powder.

  • 5 rhubarb stalks, chopped (0.5 kg, 1 lb, or 2 cups)
  • 1 1/2 to 2 cups of cold, purified water, 350 to 500 ml
  • 1 large piece of fresh ginger
  • strawberries, 250 g (1 lime), zest
  • 8–12 easy dates

To Serve

  • Yogurt (or parmesan, ice cream, whipped cream or confectionery)
  • Palatable flowers (or you can also use chopped nuts or seeds)


  1. First of all, you should clean and chop it into 1-inches bits.
  2. Add water, ginger and grated ginger as well as lime zest. Boil it.
  3. Then, you must turn down the heat and allow it to simmer for 5-8 minutes.
  4. Then, blend it in the food processor. Now, add strawberries, dates, and a bit more water. Mix it well until it becomes puree.
