Mushroom Soup with Red Rice & Avo Toast

Mushroom soup is the best food to eat for obtaining more vitamins. This soup is a combination of both red rice and avo toast. So, keep reading to make this nutritional and healthy soup.


4 portions


  • 1 cup red rice, raw
  • 2-cups of water
  • table salt

Mussel Soup

  • 2 tablespoons of butter, ghee, or olive oil
  • Garlic cloves, two
  • Thyme sprigs, two
  • 2 rosemary stems
  • 4 (250 g) cleaned portobello mushrooms
  • 8 (250 g) cleaned brown buttons or champignon mushrooms
  • a big glass of optional white wine
  • 1 liter or 4 cups of water
  • 1 cube or tbsp. of veggie bouillon
  • Black pepper and kosher salt

For the Avocado Toast

  • Two pieces of rye sourdough
  • 1 mature avocado
  • Cold-pressed olive oil, 1 teaspoon
  • pepper flakes
  • granular sea salt

For Serving, Fresh Parsley

  • unflavored yogurt to serve (optional)


For the Rice

  1. Wash the rice properly, and drain the water.
  2. Add the 2 cups of water to the pan. Let it reach the boiling point.
  3. Now, add the rice, and let it cook for 45 minutes.
  4. Add the salt at the end time.
  5. Make sure to drain any excess water.

For the Soup

  1. Add the chopped garlic cloves and mushrooms. Cook it well.
  2. Now, add herbs. Cook for 5-8 minutes. Brown and soften the ingredients.
  3. Make sure to add the wine to the saucepan.
  4. It is high time you add bouillon, pepper, and salt to it.
  5. Let it simmer, and cover it with a lid.
  6. Then, you should smoothen the ingredients with the help of a blender.
  7. Make sure to serve in bowls.
